I know that's what you're thinking but give it a second to sink in. Now imagine this:
Slow-roasted crispy bacon, salty and crunchy the way it's supposed to be. The sweetness of garden-fresh carrots. The spice of fresh ground peppercorns. The carmelized goodness of flame-touched maple syrup. All wrapped in a delicious applewood smoke.
THIS is what we're talking about!
Such a simple amazing dish takes only 4 ingredients:
- Fresh carrots (scrub the skin so they shine)
- Peppercorns in a pepper mill
- Maple syrup
Obviously, you want to wrap the carrots in bacon. Sprinkle the pepper over them. Stick them on a raised grate straight into your pizza oven at about 300-400 degrees and close the door.
Wait about 10 minutes. Pull out the tray and flip the carrots around so the other side can crisp. Put back in the oven and wait another 10 minutes.
Once the bacon is nice and brown, the carrots will have also properly softened. Pull out the tray and drizzle maple syrup all over them. Put back into the oven for about 7 minutes. At this point, close your chimney and air vents and let the heat and smoke do their thing.
At about 7 minutes the maple syrup will be carmelized and you can pull out and let cool.
